Cedar sushi is a mackerel sushi wrapped by a thinly sliced cedar tree. The wood box using local cedar materials is made by local forestry workers. Historically, mackerel used to be brought from the seaside to the old capital Kyoto via Keihoku's path, and it was very precious in the deep mountains. We have packed this treat filled with local history and culture in a cedar box and decorated with paper with a drawing of fish, and a ceder leaf. All these packaging materials are natural, and symbolize sustainable local lives.
Mr. Kunimatsu started his career when he was 18 years old, and for more than 30 years he has been involved in various projects as a designer. In his long career, at first, he had been engaged in design which aimed at developing corporate branding or making people's lives richer in economic way. He, however, thinks that intrinsically 'design' is a technic which harmonizes different things in one same world. Nowadays, he tries to redesign various relationships such as ministries, local communities, enterprises, environments, culture, and so on, and to make new marketing model that can create new values for society.
