DESIGN NAME: Gyu-kaku & On-yasai
PRIMARY FUNCTION: Restaurant
INSPIRATION: Yin and Yang. It describes how opposite or contrary forces are actually complementary, interconnected, and interdependent in the natural world. Yin is characterized as soft, yielding, diffuse, cold, wet, and passive; and is associated with water and femininity. Yang, by contrast, is hard, solid, focused, hot, dry, and active, and is associated with fire and masculinity. A contemporary Japanese love story of Yamato nadeshiko and bushi begins, showing authentic Japan spirit with modern touch.
UNIQUE PROPERTIES / PROJECT DESCRIPTION: A project with two different theme and type of cuisines, maintaining its integrity under the brand. A love story of an ordinary Japanese lady and bushi is developed to demonstrate the Contrast but As One. Iconic bushi spirit emphasis the nobility and upgrade to fine dining.
Gyu-kaku Japanese Yakiniku Restaurant is a well-known branched restaurant and On-Yasai is new to Hong Kong, it serves Shabu-Shabu. Picking their uniqueness, emphasis their contrast, i.e. Gong-hard and masculinity Yau-soft and femininity to represent grill and boil.
OPERATION / FLOW / INTERACTION: Step into Gyu-Kaku, people are attracted by Bushi's iconic pattern and the fascinated harbor night view. Everyone enjoy the fascinated view, indirect lighting is applied to reduce the reflection of window glass, and enhances the fine dining experience. Metallic material and colour well present the Grill cooking. On contrast, contemporary and light-touched design at On-Yasai reduces Meat feel.
For restaurant operator, a flexible layout of table setting to accommodate different group size of guess, an adjustable petition is designed, it also increase the privacy of dining.
PROJECT DURATION AND LOCATION: The project started in mid-November 2015 and completed in early January 2016 in Harbour City, Tsim Sha Tsui, Hong Kong.

PRODUCTION / REALIZATION TECHNOLOGY: Consider the durability and sustainability, iron is being finished with curve to make Sakura and its trunk, these can express the soft and yielding at On-Yasai. By contrast, silver and black to express the strong, raw and focus at Gyu-Kaku.
SPECIFICATIONS / TECHNICAL PROPERTIES: Around 4 000 sq ft. Such a small area to provide two different restaurants.

RESEARCH ABSTRACT: Site tour to Japan and research for the traditional bushi to familiar their beautiful patten and also study the history of old Japan's village for both restaurants.
Nevertheless, dealing with different product suppliers to figure the best way to improved ventilation with fine technical skill and materials.
CHALLENGE: Great challenge is faced because of its limited space for a restaurant, dish serving flow, ventilation of grill and hot-pot's steam is carefully managed without distort the design beauty, no exhaust duct could be seen.
Moreover, making the project contemporary could attract customers to try tradition food, especially in that young and high-end shopping mall.
