In Between Octaves

PRIMARY FUNCTION:
Japanese Ramen House

INSPIRATION:
When we think back to eating ramen in Japan, we remember how lucky we were to get seats at the counter. From there, we could closely observe the ramen artisans meticulously preparing each bowl. The way they shook the noodles, accompanied by their spirited shouts, made us even more excited for the ramen to be served.

UNIQUE PROPERTIES / PROJECT DESCRIPTION:
In a westernized shopping mall, we incorporate oriental elements into the space. Through architectural manipulation technique, a grid sequence is created where the central axis runs through the space, creating a relationship between the new and old parallel axes. An array of hand-written calligraphy lanterns is used to frame the outer kitchen and dining areas like a musical score. Notes continuously perform the contemporary Japanese space with sound tracks between the spatial scores.

OPERATION / FLOW / INTERACTION:
When customers enter the store, you can observe the ramen chef's preparation process due to the open kitchen. The sound of the ramen chef shaking the noodles and his spirited shouting make people look forward to the ramen being served. The inner and outer kitchens form an O-shaped circulation line through two food delivery ports, allowing for smooth execution of food preparation, soup making, meal delivery, recycling, and cleaning.

PROJECT DURATION AND LOCATION:
The project was designed in October 2022. The project began construction in November 2022. The restaurant had a trial operation in December 2022. The restaurant officially opened in January 2023 in New Taipei City, Taiwan.

PRODUCTION / REALIZATION TECHNOLOGY:
We made the following attempts to visualize the spatial atmosphere we want to convey: 1. Open kitchen bar with sliding window 2. Wooden trusses with atmospheric lighting 3. Stainless steel square expanded mesh to add details to the truss facade 4. Facade metal grille and wooden grille 5. Long wall tiles extend against textured white wallpaper 6. Long linear wall washer 7. Handwritten Japanese calligraphy lantern 8. The looming floor-to-ceiling glass 9. Brand logo styling lamp with clear details

RESEARCH ABSTRACT:
The ramen shop owner insists on using natural ingredients such as pork bones to cook the secret soup every week, in order to let gourmets taste the delicious soup. The owner told us, when we think back to eating ramen in Japan, we remember how lucky we were to get seats at the counter. The way they shook the noodles, accompanied by their spirited shouts, made us even more excited for the ramen to be served. How to make this space reflect the focused spirit of ramen chef is our goal.

CHALLENGE:
We must complete the construction within 45 days to catch up with the Christmas events in the area where the restaurant is located.

PROFILE:
The company's "issyokemen" is a popular ramen brand from Hong Kong. It has finally opened its first branch in Taiwan. The store name is taken from the Japanese word "Isshokenmei".
