PRIMARY FUNCTION:
Restaurant and Bakery

INSPIRATION:
Given that it is a restaurant inside a sports facility, the menu intends to serve a healthy diet, and the staff uniform is designed to be casual, resembling the building’s concept. We expressed through this restaurant not only the food but the connection and mixing of elements of diverse origin such as sports, community, and business, by designing the overlapping ceiling louvers in the hall and the wooden flooring.

UNIQUE PROPERTIES / PROJECT DESCRIPTION:
The project is a bakery / restaurant inside a sports facility in front of a suburban railway station. With & -and- as the key concept, we aimed to create a space open to the community and bonds elements such as sports, community, food, and corporations, just as & bonds things together. With high ceilings, the space is dynamic and liberating. The core station counter is planned in the center, surrounded by various types of seats that could be arranged to suit its desired scene.

OPERATION / FLOW / INTERACTION:
To prevent the overlap between flow lines of restaurant users and take-out users, we have designed to separate the users at the station counter after welcoming the customers at the main entrance. The cash registers are also provided at each counter to achieve smooth operation even during the busiest hours.

PROJECT DURATION AND LOCATION:
The restaurant is inside the Toyoda Gosei Memorial Gymnasium, established in Inazawa City, Aichi Prefecture. The project started in January 2019 and opened in September 2020.

PRODUCTION / REALIZATION TECHNOLOGY:
The station counter is planned in the center of the restaurant to be surrounded by seating spaces. The seats are arranged with diverse styles such as with small and large tables, sofas, lounge space, and private rooms to give a fresh impression upon every visit. The main kitchen is located in the back. The closer to the kitchen, the lower the ceiling, increasing the sense of intimacy. The bakery / patisserie kitchen faces the glass curtain wall, allowing the workplace to be visible from outside.

SPECIFICATIONS / TECHNICAL PROPERTIES:
The restaurant is composed of seating space (292 sq.m), kitchen (108 sq.m), and toilet (20 sq.m), which is 420 sq.m of gross floor area with 98 seats. The ceiling is 3.5 m high at maximum in the hall seating space, offering an open atmosphere. As the ceiling slopes down from the west hall seating area towards the kitchen in the east, the ceiling height near the kitchen becomes as low as 2.4 m. The sloped ceiling provides a gradual transition from the open atmosphere to a small but cozy space.

RESEARCH ABSTRACT:
We began our approach by deciphering the characteristics of the community. Our initial impression of the neighborhood was that there were mainly low-price-ranged restaurants. Although there were concerns of high-class restaurants not being welcomed, our efforts to bring a new wave to the community brought success as a result. Given the pandemic from 2020, we were blessed with more visitors who wish to enjoy luxury dining in the neighborhood without accessing city centers.

CHALLENGE:
At the start of the project, the client brought us a brief scheme of the new restaurant. However, to establish a concrete plan for the restaurant, it was necessary to sophisticate the initial scheme to an integrated design, not only of interior design, but also of operation, menu, restaurant’s name, logos, and uniforms. We were involved as an overall design administrator and consequently achieved a new brand with a solid concept.

The client is Nagoya Castle Hotels Group which operates renowned luxury hotels in Nagoya City, Aichi Prefecture. It was the first business attempt for the client to open a restaurant with a bakery, providing take-out service in a suburban setting.
