PRIMARY FUNCTION:
Japanese Cutlet Restaurant

INSPIRATION:
Deformation of our tradition and good localization are essential in order to make Japanese culture easier to be accepted by foreign countries. Those two focus points are main subject. And, these are the first inspiration of designing this restaurant.

UNIQUE PROPERTIES / PROJECT DESCRIPTION:
This is a Japanese cutlet restaurant chain called ”Saboten”, the first flagship restaurant in China. One of our approaches was to add Japanese traditional aspects to the materials. Furthermore we made deformation and adjusting this to modern style to created a new identity. And Another approach we challenged is that we tried to understand the local culture and to partly localize the designs and layouts. This appeared as the height of the partitions and also round tables.

PROJECT DURATION AND LOCATION:
The project December 2012 in Japan and finished in March 5th 2013 in Beijing, China.

PRODUCTION / REALIZATION TECHNOLOGY:
For the façade, on the upper wall, we utilized Japanese traditional material called “Kumiko” (woods for Japanese traditional technique) in order to make surface-emitted boxes. This makes the restaurant more sophisticated. This well-organized appearance evokes image of Japanese architecture. Furthernore, there are seats that are not visible from the entrance. Here, we chose some accent colors to alter the atmosphere. Only those who use here will realize the amazement of the restaurant.

RESEARCH ABSTRACT:
Here, viewing the future visions of restaurant chain, we made designs that will become useful manuals when expanding to China and also overseas. First of all, one of our challenges was to grasp the right understanding of “Japanese images” that the foreigners prefer. We focused mainly on” traditional Japan”. At present, compared with this modern style brand, we put in effort on how to incorporate this” traditional Japan”. Nevertheless, it is just one of our Japanese minds of hospitality known as ”Omotenashi”. But this does not mean that we created this Japanese restaurant so that it will look like Chinese restaurants.

CHALLENGE:
The traditional skill is very difficult in every countries, also Japan. It did not copy instantly. So, we bring the skill like a "Kimono" and "Kumiko" from Japan to China for this project.
